Thermal processing is a food sterilization technique in which the food is heated at a temperature high enough to destroy microbes. This process consists of picking fresh peppers (or other raw material) and removing all field debris in a thorough inspection. The raw material is then washed in a special water solution before it passes through multiple milling machines depending on the desired cut and texture each customer prefers. Many ingredients can be added to the freshly cut or ground mixture and is acidified per FDA regulations. Following the mixing and acidifying, the mixture is cooked at a high temperature for several minutes. The cooked product is filled, weighed, cooled, and packaged.
